Sweet/Hot Dill Pickles





3 quarts thinly sliced cucumbers




To each jar add:


1 head of dill


2 cloves of garlic, crushed


1 or 2 small dried red peppers




Bring to a boil:


4 cups sugar


4 cups cider vinegar


4 Tablespoon pickling salt


Pour over cucumbers in jar and put sterilized lids and bands on jars.


Process in boiling water bath 10 minutes.

This recipe is only for 3 quarts of pickles.

I double it and make many batches.

Many years ago, I never would have imagined myself exclaiming how "pretty" pickles are...but those are indeed quite pretty. :) Doesn't canning just make ya so proud!! LOL!

Sorry to bother you again,i have checked this site but cant find the conversion to European metrics.( i should have mentioned it in my previous post, sorry for that)
How may cucumbers are 3 quartz?

Hello again Celine ~
You are not bothering me, I just wish I could be of more help to you.
Because I make pickles in a larger quantity than this recipe calls for, I am not sure exactly how many cucumbers to a quart, but I would say at least 6-8 medium sized cucumbers (sliced)per jar. A medium sized cucumber would be about 5 inches long. Again, I don't know the metric conversion, sorry. I would think if you got 24 cucumbers, you would have a sufficient amount for three quarts or jars of pickles. (I do mine in pints which will only confuse you more!)
When making my pickles, I go to a farm stand that sells them by the 100 count. I buy 300 medium sized cucumbers and that makes many jars of several different types of pickles ~ we like dill and sweet hots. My dear Mother-in-law writes all purchases and quantities down. For her 300 cucumbers, she made 38 quarts of dill pickles, and 19 quarts of sweet hots.
